To get it under way, in this latest podcast we explore the role of pigs and pork in shaping American history, in the company of historian <a href=\"https:\/\/www.mtroyal.ca\/ProgramsCourses\/FacultiesSchoolsCentres\/Arts\/Departments\/Humanities\/Faculty\/JoeAnderson.htm\">Joseph Anderson<\/a>, who told me:<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Swine, like so many species, are very opportunistic and they are able to exploit a niche. That was one of the things that made them such a great source of calories for thousands of years. When you put them in an estuary, or you put them in hill country, or in a forest or savannah, they will find a way [to thrive]. They&#8217;re incredibly tough, so terribly fast, and they&#8217;re able to exploit lots of different ecosystems. It makes them great colonizers.<\/p><\/blockquote>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.podularity.com\/thehedgehogandthefox\/wp-content\/uploads\/2020\/03\/Screenshot-2020-03-09-16.27.16.png\" alt=\"\" class=\"wp-image-1167\" width=\"123\" height=\"181\" srcset=\"https:\/\/www.podularity.com\/thehedgehogandthefox\/wp-content\/uploads\/2020\/03\/Screenshot-2020-03-09-16.27.16.png 398w, https:\/\/www.podularity.com\/thehedgehogandthefox\/wp-content\/uploads\/2020\/03\/Screenshot-2020-03-09-16.27.16-204x300.png 204w\" sizes=\"auto, (max-width: 123px) 100vw, 123px\" \/><figcaption>J.L. Anderson<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">In his book, <em><a href=\"https:\/\/wvupressonline.com\/node\/780\">Capitalist Pigs<\/a><\/em>, Joe reproduces a humorous map of the United States from 1876 entitled a \u2018Porcineograph\u2019, in which the outline of the entire country has been lightly tweaked to take on the appearance of a pig: snout to the east, tail to the west, Florida a fore trotter, Baja California co-opted as a rear one. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The legend on the map listed pork dishes associated with each region: ham sandwiches in California, salt pork in Arkansas, scrapple in Pennsylvania, pickled trotters (appropriately enough) in Florida. \u2018The message\u2019, Joe writes, \u2018was simple. Swine and pork were omnipresent from coast to coast.\u2019 <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"700\" height=\"519\" src=\"https:\/\/www.podularity.com\/thehedgehogandthefox\/wp-content\/uploads\/2020\/03\/duroc-jersey-ad-2.jpg\" alt=\"\" class=\"wp-image-1174\" srcset=\"https:\/\/www.podularity.com\/thehedgehogandthefox\/wp-content\/uploads\/2020\/03\/duroc-jersey-ad-2.jpg 700w, https:\/\/www.podularity.com\/thehedgehogandthefox\/wp-content\/uploads\/2020\/03\/duroc-jersey-ad-2-300x222.jpg 300w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">How pork came to be \u2018the meat that built the nation\u2019 is the theme of Joe\u2019s book, and also of our conversation. He writes, \u2018Bacon was the most commonly consumed meat on the Oregon and California Trails. Immigrant Helen Carpenter complained about the monotony of overland trail food:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cAbout the only change we have from bread and bacon is to bacon\nand bread.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u2018Authors of guidebooks for overland immigrants advised packing 25\nto 75 lbs of bacon per person for the 110-day trek, which meant as much as over\nhalf a pound per day.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8216;Pork fuelled the gold rushes, the logging frontier, military posts, and the canal and railroad boom across the continent.\u2019 <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It also fed the enslaved people of the American south, their calorie intake carefully calculated to maximize productivity without enabling dissent. <\/p>\n\n\n\n<iframe loading=\"lazy\" scrolling=\"no\" allow=\"autoplay\" src=\"https:\/\/w.soundcloud.com\/player\/?url=https%3A\/\/api.soundcloud.com\/tracks\/773224003&amp;color=%23c33967&amp;auto_play=false&amp;hide_related=false&amp;show_comments=true&amp;show_user=true&amp;show_reposts=false&amp;show_teaser=true\" width=\"100%\" height=\"166\" frameborder=\"no\"><\/iframe>\n","protected":false},"excerpt":{"rendered":"<p>After a three-month hiatus, the Hedgehog and the Fox is back with a new spring season.
